Cabbage Salad
Cut the cabbage in half, discard the outer leaves and trim the hard stem and core at the bottom. Quarter it, lay each quarter on its side and cut long, but very thin, slices until you reach the central core, which you discard. Put it into a bowl of salted cold water and rinse properly. Drain in a colander, squeezing it gently, and let it drain for 30 minutes. Place in a bowl. Prepare separately 4 tablespoons olive oil with 2 tablespoons lemon juice, salt and mix well. Pour over the salad and toss. You may also add some black olives. Alternatively use 4 tablespoons olive oil with 1 of wine vinegar, lemon though is more traditional. Recipe
