    Ancient Green Sauce

    List of Ingredients




    3-4 slices Italian bread, crusts removed
    1/4 cup red wine vinegar
    1 egg, hard-boiled and shelled
    1/2 bunch Italian parsley, leaves only
    2 anchovy filets
    1 clove garlic, peeled
    2 tablespoons capers, rinsed
    1 tablespoon pine nuts
    extra-virgin olive oil, as needed
    salt to taste

    Recipe



    Soak the bread in the vinegar and squeeze dry. Set aside. Chop the egg, and set aside. In the bowl of a food processor, work the parsley, anchovies, garlic, capers, and pine nuts into a paste. Add the bread and the hard boiled egg. In a slow, steady stream, add the olive oil with the motor running, until you obtain a rather fluid sauce. It should be between the texture of a mayonnaise and a creamy
    salad dressing. Season with salt and pepper, and serve over roast beef, or topping a hard-boiled egg. Makes 1 cup
