    Dixieland Tomato Bisque

    List of Ingredients




    "This relative of gazpacho, the tangy cold Spanish soup, requires no culinary skills whatsoever to prepare. The only effot will be helping yourself to seconds."


    1 (16 oz.) can whole tomatoes
    1 cup nonfat yogurt
    1/4 tsp. hot pepper sauce
    2 cloves garlic, minced
    1 tsp. prepared horseradish
    Jalapeno chile, minced to garnish (optional)
    2 Tbsp. lemon zest to garnish (optional)




    Recipe



    Combine tomatoes, yogurt, hot pepper sauce, garlic and horseradish in a blender or food processor; process until pureed. Pour mixture into a bowl, cover and refrigerate until chilled. Pour into bowls and serve cold garnished with minced chile and lemon zest, if desired.

    Makes 6 to 8 servings
