Princess Soup

I often sing the praises of a good chicken stock because of all the wonderful things you can use it for. One of my favorites is Princess Soup, a light soup with a touch of egg and cheese, a fine beginning for many meals. You can make this dish with a good-quality canned stock or broth, but it won't be as terrific as with homemade.
1 egg
1/8 tsp. freshly ground nutmeg
2 cups chicken stock
freshly ground black pepper to taste
1 Tbsp. grated Parmesan cheese
Recipe
Break the egg into a small bowl, add the nutmeg, and beat well with a wire whisk. Bring the chicken stock to a boil and pour in the egg, stirring constantly with the whisk.
The egg will float in small pieces.
Pour the soup into individual serving bowls, add a twist of ground pepper, sprinkle with Parmesan, and serve.
