    Pumpkin Pie Soup

    List of Ingredients




    2 1/4 tablespoons Extra Virgin Olive Oil
    2 cups canned solid pack pumpkin
    3 cups milk
    1 tablespoon sugar
    1 teaspoon dark molasses
    1/2 teaspoon ground allspice
    1/2 teaspoon ground nutmeg
    pinch ground cloves
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    chives, chopped

    Recipe




    In a saucepan, stir together the olive oil, pumpkin, brown sugar, and spices. Heat over medium heat, stirring frequently. When mixture starts to bubble, reduce the heat to
    low and simmer, and continue frequent stirring.

    In a separate saucepan, heat milk, but do not boil. After pumpkin mixture has simmered for about ten minutes, add the hot milk and stir. Simmer for a couple of minutes
    longer before serving, garnished with chopped chives. Serves 4-6.
