    Mom's Pineapple Cake with Carmel Icing

    This was a favourite Birthday Cake for us.


    List of Ingredients


    • 3/4 cup shortening
    • 2 cups sugar
    • 5 egg yolks
    • 2 2/3 cups flour
    • 1/2 tsp salt
    • 3 tsp baking powder
    • 1 cup pineapple juice
    • 1 tblsp lemon juice
    • 3 egg whites
    • 3/4 cup well drained pineapple (crushed)
    • PINEAPPLE FILLING:
    • 1 20 oz can crushed pineapple
    • 2 tblsp cornstarch
    • CARAMEL ICING:
    • 1/2 cup butter
    • 1 cup brown sugar
    • 1/4 cup milk
    • 1 1/2 - 2 cups icing sugar


    Instructions


    1. Heat oven to 350F and prepare 3 9" round cake pans (grease & flour).
    2. Cream shortening and add sugar gradually.
    3. Add egg yolks one at a time, beating well, unitl light and fluffy.
    4. Sift dry ingredients together.
    5. Stir dry ingredients into creamed mixture alternately with the pineapple & lemon juices, ending with dry.
    6. Beat egg whites until stiff & fold in.
    7. Quickly fold in the crushed pineapple.
    8. Divide the batter evenly and bake about 30 minutes. If you can only bake 2 at a time, keep refrigerated.
    9. Cool on cake racks.
    10. Fill with pineapple filling and ice.
    11. FILLING: Heat over medium heat pineapple with juice, add cornstarch and cook until desired consistency.
    12. CARAMEL ICING: Melt butter and add brown sugar.
    13. Cook on low heat 2 minutes.
    14. Stirring constantly, add milk and continue to stir until mixture comes to a boil.
    15. Remove from heat and cool.
    16. Add sifted icing sugar until you reach the desired consistincy.
