    Chili Sauce - Like Junior's

    Recipe Introduction


    Junior's is a local Winnipeg "burger joint" that serves burgers & dogs with a terrific chile sauce with a greek flavour. This is a favorite of ours.


    List of Ingredients


    • 2 tbsp olive oil
    • 2 onions finely minced
    • 4 garlic cloves
    • 2 lbs ground beef
    • 2 tbsp chili powder
    • 1 tbsp ground cumin
    • 1 tsp oregano leaves
    • 2 tsp cocoa
    • 2 tsp salt
    • 1 tsp celery seeds
    • 1 tsp tumeric
    • 1 tsp cinnamon
    • 1/2 tsp hot red pepper flakes
    • 2 cups tomato juice
    • 2 cups beef broth
    • 1/4 cup cornmeal


    Instructions


    1. Heat oil in Dutch oven set over medium heat.
    2. Add onion & garlic .. saute until translucent, stirring occaisionally..about 10 minutes.
    3. Add ground beef and cook until brown, stirring frequently...about 8 minutes.
    4. Combine chili powder with ground cumin,oregano, cocoa, salt, celery seeds, tumeric, cinnamon & hot red pepper flakes.
    5. Mix spice mixture into ground beef & stir for 3 minutes.
    6. Add tomato juice & broth and bring to a boil stirring occaisionally.
    7. Reduce heat and simmer until liquid is reduced by 1/3....about 1 1/2 hours.
    8. Add cornmeal and stir for 2 minutes.
    9. Cool slightly then cover and freeze in airtight container up to 2 months or refrigerate up to 3 days.
    10. Warm over medium low heat.


    Final Comments


    Great on burgers and hotdogs... use on pasta too!
