    Dried Cherry & Chocolate Biscotti

    Recipe Introduction


    Preheat the oven to 350F. Use parchment paper on a cookie sheet.


    List of Ingredients


    • 2 cups flour
    • 1/4 cup cocoa powder
    • 2 tsp baking powder
    • pinch of salt
    • 1/4 tsp cinnamon
    • 1/4 tsp nutmeg
    • 1 cup unblanched whole almonds (or filberts)
    • 1 cup dried cherries (or cranberries)
    • 3 large eggs
    • 3/4 cup sugar
    • 1 tsp vanilla


    Instructions


    1. Mix dry ingredients, nuts and cherries in one bowl.
    2. Mix eggs, sugar, and vanilla until smooth in a larger bowl.
    3. Add the dry to the wet and mix into dough.
    4. Turn dough out on counter and knead a couple times.
    5. Shape dough into a log 12 inches by 4 inches.
    6. Place on parchment paper on a cookie sheet.
    7. Bake 30 minutes, remove from the oven & cool completely.
    8. Slice into 1/4 inch pieces, place on parchment lined cookie sheet.
    9. Bake again for 12 to 14 minutes.
