    List of Ingredients

    1 pound Brussel sprouts, trimmed
    1 tablespoon fresh lemon juice
    2 tablespoons unsalted butter
    2 tablespoons all-purpose flour
    1 cup milk, warmed
    1/4 cup shredded cheddar cheese
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/4 teaspoon ground nutmeg
    pinch cayenne


    Heat oven to 350F. Place Brussels sprouts in saucepan and cover with water. Add lemon juice and simmer, uncovered, until tender--about 8 to 10 minutes. Drain.

    Meanwhile, melt butter in small saucepan. Stir in flour and cook 1 to 2 minutes. Gradually whisk in milk. Continue whisking while cooking about 2 minutes until sauce thickens. Stir in cheese and seasonings.

    Transfer Brussels sprouts to a 1-quart casserole and pour sauce over the top. Bake in 350F oven for 20 minutes or until heated through.
