    Peanut Brittle (Microwave)

    List of Ingredients


    • 1 cup white sugar
    • 1/2 cup light corn syrup
    • 1 cup salted peanuts
    • 1 teaspoon butter
    • 1 teaspoon vanilla
    • 3 teaspoons baking soda


    Instructions


    1. Butter a cookie sheet.


    2. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 3 1/2 minutes.


    3. Stir in peanuts and microwave on high 3 minutes more and stir in butter and vanilla and microwave 1 minute.


    4. Stir in baking soda until light and foamy.


    5. Pour onto cookie sheet and spread thin. Cool completely and break into pieces.




    Final Comments


    Cooking times are for 1000 watt microwave. This brittle is VERY easy to burn! You may have to adjust cooking time to your microwave. 1200 watt: 1st cooking 3 min, 2nd cooking 2 1/2 min, 3rd cooking 30 seconds. Spray all bowls and cooking utensils continually with non stick spray. VERY STICKY!
