    Amy's Chicken and Dressing

    List of Ingredients


    • 1 whole chicken , 4 leg quarters or 4 large chicken breasts- boiled and pulled apart
    • butter
    • 2 chicken bullion cubes
    • 2 raw eggs
    • 1 medium onion chopped into small pieces
    • 6 stalks of celery - 2 whole ones to cook in your chicken and 4 choppeed very small to add to your dressing mixture
    • 1 can cream of chicken soup
    • salt and pepper to taste
    • rubbed sage - to taste
    • garlic salt - to taste
    • 2 pans cornbread - recipe included
    • Swansons chicken broth - this is just a GREAT thing to have on hand. You may not even need it but if you find out you are running out of chicken stock as you are mixing up your dressing, this will be worth a million dollars to you at that moment, lol. I keep 4 boxes in my cabinet at all times, lol.


    Instructions


    1. Cook your cornbread. This can be done a day ahead of time. CORNBREAD cups self rising corn meal 1 egg and milk mix well, should be about pancake batter consistency. preheat oven with oiled skillet in the oven while it preheats to 450. When oven is preheated, pour batter into hot skillet and cook till golden brown. Let it cool and then crumble it all up real good with your hands. You will need 2 pans of cornbread for a large casserole dish of dressing.


    2. Pick which parts of the chicken you want to use. (I use thighs or leg quarters, they make better tasting broth) You will need 4 or 5 pieces. Boil your chicken with a GREAT BIG spoonful of butter and a couple of whole celery sticks, salt and pepper, until done.Throw The celery that you cooked with your chicken away it was just in there for taste.Take out of broth and let cool.


    3. OK now for the fun part: Add all ingredients together in a LARGE bowl:


    4. Add chicken stock a little at a time until you get it very moist (not real soupy, but VERY moist). I start with 3 cups and then continue to add a little at a time. If you run out of stock, dont worry you can use Swansons chicken broth.


    5. Add some salt and pepper, garlic salt and about a tablespoon of sage.


    6. Mix this all up REALLY good.I never use a spoon, lol. I wash my hands about a thousand times and use them, God made the best mixers, they are on the end of your arms, lol. ok... now take a little taste, see if you think it needs more salt, pepper or if you can taste the sage. BE CAREFUL with your sage, you can always add more but once you over do it, there is nothing that can help. You should be able to tell it is in there but not so much that it is bitter. If you need to add more do NOT add it by the tablespoon, just shake a little in , mix it up and taste again, till you get it where you want it.


    7. Pour into your casserole dish and bake on 375 till top is good and golden brown.


    8. Last step: EAT AND ENJOY!!!!!!!!
