    Chicken & Sausage Casserole

    List of Ingredients


    • 10-11 chicken breasts
    • 9 cups water, boiling
    • 3 envelopes dry lipton chicken noodle soup
    • 2 cups raw rice
    • 1 lb breakfast sausage
    • 1 bell pepper (chopped)
    • 1 large onion (chopped)
    • 1 cup chopped celery
    • salt to taste
    • curry powder to taste
    • 2 cans cream of mushroom soup


    Instructions


    1. Boil chicken breasts until tender. Let cook. Debone.


    2. Cut chicken into small pieces, set aside.


    3. To boiling water (broth from chicken) add soup mix and rice.


    4. Boil 9 minutes uncovered. Fry sausage, remove from skillet and drain.


    5. In sausage drippings, saute' bell pepper, onion and celery. Add this and sausage to soup mix.


    6. Season to taste with salt and curry powder.


    7. Add mushroom soup and chicken pieces.


    8. Place mixture in casserole dish and bake 45 minutes at 350 degrees.




    Final Comments


    Serves 16. Can be prepared ahead and frozen.
