    Red Beans & Rice

    List of Ingredients


    • 2 cans dark red beans
    • 2 cans light red beans
    • 1 large smoked ham hock
    • 1 1/4 cup water
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon garlic salt
    • 1/4 teaspoon ground red pepper
    • 1/4 teaspoon black pepper
    • 5 cups long grain rice (cooked)
    • 2 pounds smoked sausage (cut in small cubes or thin slices)


    Instructions


    1. Pour 2 cans light red beans and 1 can dark red beans in large boiler.


    2. Add ham hock and water.


    3. Simmer on medium heat for an hour until the meat starts to plull from the bone.


    4. Remove from heat and cool enough to removed any meat from the bone.


    5. Place meat, beans and pan liquid in a food processor.


    6. To this mixture add onion powder, garlic salt and red pepper.


    7. Process only 4 or 5 seconds.


    8. Beans should be chopped and the liquid thick.


    9. Add the last can of beans (drained).


    10. Process for a second or two, you want the last can of beans to remain almost whole.


    11. Pour bean mixture back into boiler and cook slowly on low heat, add smoked sausage and cook 5 minutes.


    12. Serve over rice.



    Final Comments


    I use a stick blender instead of a food processor and mix in the boiler itself.
