    Sweet Potato Casserole

    List of Ingredients


    • 6 medium sweet potatoes (3 lbs)
    • 1 cup white sugar
    • 1/2 cup milk
    • 1/3 cup plus 2 tablespoons butter (melted & divided0
    • 2 large eggs
    • 1 teaspoon vanilla
    • 1/2 teaspoon salt
    • 1/2 cup light brown sugar
    • 3 tablespoons flour
    • 1/2 chopped walnuts or pecans
    • 14 large marshmellows, cut in half crosswise


    Instructions


    1. Pierce potatoes with fork. Cook on high in microwave until tender, turing once, about 8 minutes per side.


    2. Cut open to cool. Spoon potato meat into bowl, mash until smooth. Measure out 3 cups.


    3. Preheat oven to 350 degrees.


    4. Coat 11 x 7 baking dish with spray. Set aside.


    5. Combine mashed sweet potoates, white sugar, milk, 1/3 cup butter, eggs, vanilla adn salt in medium bowl.


    6. Stir to mix well. Spoon in prepared dish.


    7. Combine brown sugar and flour in small bowl. Stir to mix well.


    8. Sprinkle over potatoe mixture. Sprinkle with nuts.


    9. Drizzle with remining two tablespoons butter.


    10. Bake 20 minutes.


    11. Remove from oven and top with marshmellows.


    12. Bake 10 minutes more until light brown.
