Roasted Stuffed Portabellas

List of Ingredients
- 1 large onion
- 2 cooked chicken breasts, diced
- 10 oz package of frozen chopped broccoli (thawed and undrained)
- 1/2 cup diced oil packed sun-dried tomatoes
- 2 tablespoons seasoned dry bread crumbs
- 4 large portobell mushroom caps, cleaned and stems removed
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 400 degrees. Coat a baking sheet with non stick spray.
- In medium bowl, combine chicken, broccoli with liquid from package, sun dried tomatoes and 1 tablespoon oil from tomatoes.
- Toss to combine.
- Arrange mushrooms caps, stem side up on prepared baking sheet.
- Fill each mushroom with chicken mixture.
- Roast 15 minutes and then add shredded cheesse.
- Cook 5 more minutes or until filling is golden brown and mushrooms are tender.
