    Roasted Stuffed Portabellas

    List of Ingredients


    • 1 large onion
    • 2 cooked chicken breasts, diced
    • 10 oz package of frozen chopped broccoli (thawed and undrained)
    • 1/2 cup diced oil packed sun-dried tomatoes
    • 2 tablespoons seasoned dry bread crumbs
    • 4 large portobell mushroom caps, cleaned and stems removed
    • 1 cup shredded cheddar cheese


    Instructions


    1. Preheat oven to 400 degrees. Coat a baking sheet with non stick spray.


    2. In medium bowl, combine chicken, broccoli with liquid from package, sun dried tomatoes and 1 tablespoon oil from tomatoes.


    3. Toss to combine.


    4. Arrange mushrooms caps, stem side up on prepared baking sheet.


    5. Fill each mushroom with chicken mixture.


    6. Roast 15 minutes and then add shredded cheesse.


    7. Cook 5 more minutes or until filling is golden brown and mushrooms are tender.
