    List of Ingredients

    2 to 3 C cooked chicken, cut in chunk-size pieces
    1 C celery, chopped and sautéed
    1 medium onion, chopped and sautéed
    1 can water chestnuts, slivered (optional)
    1 C mayonnaise
    1/2 tsp white or black pepper
    1 can cream of mushroom soup
    1 can cream of chicken mushroom soup (or cream of chicken)
    1 small pkg cornbread stuffing mix (dry)
    1 stick (1/4 lb) melted butter (add to cornbread stuffing mix)


    Place chicken in bottom of a greased 9 x 13 inch pan. Sauté celery & onion in a small amount of butter until tender. Set aside. Toss the stuffing mix with the 1 stick of melted butter. In a large mixing bowl, combine mayonnaise, pepper & cream soups. Add celery, onion, water chestnuts, & 1 1/2 cups of buttered stuffing mix. Reserve remaining stuffing mix for topping. Place soup mixture evenly over chicken. Top with remaining buttered stuffing mix. Bake at 350º for 30-45 minutes or until hot through.
