    This "tried & true" recipe is from a co-worker. Thanks, Rhonda!


    List of Ingredients


    • up to 6 fish fillets of your choice (ie: salmon/halibut)
    • 2 Tbsp. canola oil
    • salt & pepper
    • 2/3 cup orange juice
    • 1 1/2 tsp. Dijion mustard
    • pinch of dried thyme or rosemary
    • 1 Tbsp. butter


    Instructions


    1. Drizzle fish with oil; salt & pepper both sides, to taste;
    2. Sear on high heat until evenly browned (4-7 mins.); Remove from pan.
    3. Combine juice, mustard and thyme/rosemary and "reduce" in same pan to about 1/3 cup. Whisk in butter and pour over fish.
