    This recipe came about when I was planning to make some fried apple pies, and after assembling the ingredients, changed my mind and decided to use the ingredients as a sweet bread instead.

    List of Ingredients




    � Pound Dried Apples
    2 Tablespoons Butter, melted
    1 Cup Sugar
    1 Teaspoon Cinnamon
    2 Tablespoons Fresh Lemon Juice
    Grated Zest of one-half Lemon
    2 Cups Sugar
    1 Cup Crisco Shortening
    4 Eggs, well beaten
    2 1/2 Cups Flour
    2 Teaspoons Baking Powder
    1 Teaspoon Salt
    1 Teaspoon Cinnamon
    1 Teaspoon Nutmeg
    2 Cups Pecan Pieces

    Recipe



    Cover fruit with water and cook about one hour until soft; drain. Add next five ingredients (through the zest of lemon), mash to combine, and set aside.

    Add the well-beaten eggs to the dried fruit mixture and set aside.

    Cream sugar and shortening, then add the dried fruit mixture.

    Sift together dry ingredients and add to the above mixture. Add pecan pieces and stir only until wet and dry mixtures are blended. If you find that the batter is too stiff, thin it slightly with some purchased Egg Nog or heavy cream.

    Pour into two regular size loaf pans (or 3 small ones) that have been buttered. Bake one hour at 350 degrees (you may have to cover with brown paper if tops brown too fast).

    Delicious and moist. Freezes very well.

    NOTE: If you wish to make Peach Bread, substitute diced peaches in place of the dried apples. Also, you need to cook the peaches 15-20 minutes instead of one hour.
