List of Ingredients
3 diced bacon slices
1/2 c. chopped onion
1 crushed lg. garlic clove
2 1/2 c. (two 10 1/2 oz.) cans beef consomm�
1 1/2 c. water
2 (15 oz.) cans great northern beans and liquid
1 (6 oz.) can tomato paste
2 T. chopped fresh parsley
1/2 t. dried oregano leaves
1/2 t. dried basil leaves
1/4 t. pepper
2 c. (2 med.) sliced zucchini
1/2 c. sm. macaroni
1 (10 oz.) pkg. frozen mixed vegetables
1/2 c. grated Parmesan cheese
Recipe
Saut� bacon in lg. frying pan or Dutch oven;
add onion and garlic. Saut� until onion is
translucent. Add consomm�, water, beans
and liquid, tomato paste, parsley, oregano,
basil, and pepper. Broil gently 10 min. Add
zucchini, macaroni, and vegetables. Heat to
boiling, stirring to break up vegetables.
Reduce heat; boil gently 8 to 10 min. or until
veg. and macaroni are tender. Serve with
grated parmesan cheese. Makes 8 cups.
