    1 cup butter
    1 cup sugar
    2 egg yolks
    1 tsp. grated lemon peel
    4 tsp lemon juice
    2 1/2 cups all purpose flour
    Apricot jam
    melted chocolate

    Beat butter with sugar until well combined. Add egg yolks, lemon juice & peel beat till combined. Beat in as much flour as you can with the mixer, stir in remaining flour with a wooden spoon.
    Cover & chill for 1 hr.
    work with 1/2 the dough at a time, keeping remaining dough chilled. Roll to 1/8 thickness cut circles with a one or one & half inch cookie cutter ( I use a shot glass).Place one inch apart on a ungreased cookie sheet. Bake at 350 for about 7-9 min.
    until firm but not brown. Cool to room temp.
    Spread half with a little jam cover with another cookie.
    Dip the joined cookie half way in melted chocolate
