    Linguine with White Clam Sauce


    List of Ingredients


    • 1/2 stick butter
    • 1/4 cup olive oil
    • 1 cup chopped scallions
    • 1 (8oz.) bottle clam juice
    • 1 tomato , peeled , seeded and chopped
    • 3 garlic cloves, minced
    • 1 1/2 tsps. chopped fresh parsley
    • 1/2 tsp. dried oregano
    • 1/2 tsp. dried basil
    • fresh ground pepper
    • 1 pound fresh or frozen thawed clams, minced
    • 1 pound fresh linguine
    • 1/2 cup freshly grated parmesan cheese


    Instructions


    1. Melt butter with oil in medium skillet over med. heat.
    2. Add green onion and saute 2 minutes.
    3. Add clam juice, tomato, garlic, parsley, oregano, basil and pepper and simmer 10 minutes.
    4. Add clams and continue cooking 2 to 3 minutes.
    5. Meanwhile, cook linguine accordingly.
    6. Toss altogether and sprinkle with parmesan cheese.
