    Lemon Risotto

    As long as you don't go overboard with the lemon flavor this can be a wonderful backdrop for grilled salmon or a savory herbed pork loin.

    1 small yellow onion, diced
    4 tablespoons butter
    2 lemons, juiced
    1 cup arborio rice
    4 cups chicken broth
    3/4 cup grated parmesan cheese
    2 Tablespoons parsley, chopped

    Bring the stock and lemon juice to warm in a saucepan on top of the stove.

    Saut� the onion in butter until translucent. Add the Arborio rice and stir to coat.

    Begin adding the stock-juice mixture one ladle at a time, stirring constantly as it absorbs. This will take twenty to thirty minutes. Once you get that far into it, taste a few grains to check for doneness. Risotto should be "al dente" or toothsome.

    When the risotto is basically done, whisk in a handful of grated Parmesan and serve.

    Garnish each dish with grated cheese, some lemon zest and chopped parsley
