    Herbed Stuffed Peppers

    List of Ingredients


    • 3 medium red peppers
    • 1/2 lb ground beef
    • 1/2 cup chopped onion
    • 1 1/2 cup brown rice
    • 1/4 tsp salt
    • 1/8 to 1/4 tsp cayenne pepper
    • 1/8 tsp allspice
    • 1 (8oz) can tomato sauce
    • 1/4 cup chicken broth
    • 2 tsp balsamic vinegar
    • 1 tsp basil
    • 4 TBLS. parmesean, grated


    Instructions


    1. Cut tops off of peppers and remove seeds and membranes.
    2. Steam peppers until crisp tender.
    3. In a skillet, cook beef and onion until beef is no longer pink. Remove from heat.
    4. Stir in the cooked rice, salt, cayenne and allspice.
    5. In a small saucepan, bring to a boil the tomato sauce and broth.
    6. Stir in the vinegar, basil, and 3TBLS cheese.
    7. Stir 1/2 of sauce mixture into rice mixture.
    8. Spoon rice mixture into pepper shells.
    9. Place upright into a greased baking dish.
    10. Cover and bake at 350 degrees for 30 minutes.
    11. Sprinkle with remaining cheese and bake uncovered for additional 5 to 10 minutes or until peppers are tender.
    12. Serve with remaining sauce.
