    Broiled Cod with Chili-Lime Butter

    2 Tbsp butter, softened
    2 tsp lime juice
    1/2 jalapeno pepper, seeded and minced
    1/4 tsp chili powder
    1 lb. cod fillets
    1/8 tsp salt
    Freshly ground black pepper to taste
    Lime wedges

    Recipe



    Cream together the butter, lime juice, jalapeno pepper and chili powder.


    Place the cod on a lightly oiled broiling pan, sprinkle with salt and pepper and spread with the seasoned butter.


    Broil the fish about 4 inches from the heat source for 12 minutes per inch of thickness, or until no longer translucent. Serve with wedges of lime.

    Makes 4 servings;
    Approximate Prep Time: 10 minutes
