    Source of Recipe

    Internet

    List of Ingredients

    • 1 3/4 cups all-purpose flour
    • 2/3 cup granulated sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 2 large eggs
    • 1/4 cup melted butter
    • 1/4 cup applesauce
    • 3/4 cup creamy peanut butter
    • 1 cup coarsely diced toasted peanuts, unsalted
    • 1 cup mashed bananas

    Instructions

    1. Position oven rack in the center of the oven and heat to 350 degrees. Lightly oil and flour a 8 1/2x 4 1/2x 2 1/2 inch loaf pan.

    2. In a mixing bowl, blend together the flour, sugar, baking powder, baking soda and salt. In a medium bowl, beat eggs until foamy. Combine the butter, applesauce, peanut butter and bananas with the eggs. Blend the wet ingredients into the dry ingredients until they are moistened.

    3. Pour the batter into the prepared pan and bake for 45 to 50 minutes, or until a cake tester or toothpick inserted into the center of the loaf comes out clean and the top is golden brown.

    4. Remove pan from the oven and cool on a wire rack for 10 minutes. Remove loaf from pan and serve with cream cheese and your favorite jam or jelly.

    5. Yield: 1 loaf
