    • 2 (14 1/2 ounce) cans chicken broth
    • 2 (15 ounce) cans whole kernel corn
    • 1 large white onion, diced
    • 3 cups diced potatoes
    • 2 (12 ounce) cans evaporated milk
    • 1/3 cup butter
    • salt and pepper to taste


    Instructions


    1. In a large pot over medium heat, combine broth, corn and potatoes.
    2. Bring to a boil,reduce heat, cover and simmer 15 to 20 minutes, until potatoes are just tender.
    3. Stir in evaporated milk and butter, until butter is just melted.
    4. Season with salt and pepper and serve.
    5. Makes 8 servings at 330 calories each.


    Final Comments


    You can add more spices or whatever you like. I have used 3 cups O'Brien potatoes which adds more onion and red and green bell pepper and speeds up the cooking time if your in a big hurry to throw something quick together and dirty less dishes to wash. I also use fat free evaporated milk, light Land O Lakes butter and fat free chicken broth. Which will reduce the calories.
