    List of Ingredients


    • 6 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 tablespoon cream of tartar
    • 1/2 teaspoon salt
    • 2 1/2 cups shortening
    • 1 cup sugar
    • 1 teaspoon sugar
    • 1 teaspoon pumpkin pie spice
    • 2 eggs
    • 1/4 cup freshly squeezed orange juice
    • 1 tablespoon ground cinnamon
    • 1/4 cup sugar


    Instructions


    1. Preheat oven to 350 degrees. In a large bowl, combine flour, baking powder, cream of tartar and salt; set aside. In bowl of stand mixer, beat shortening until light and fluffy. Add sugar and pumpkin pie spice and mix until creamy. Add eggs, one at a time and blend. Add flour mixture and orange juice; mix well. Turn dough out on lightly floured board, knead until smooth, then roll out to 1/4 inch thickness. Cut dough using halloween themed cookie cutters. Onto parchment covered or non stick baking sheet, place cookies. Mix cinnamon and sugar, then sprinkle over unbaked cookies. Bake cookies until bottoms are lightly browned, about 10 minutes. Frost when cool.
    2. Yield: 5 to 6 dozen
