    List of Ingredients


    • 1/2 pound lean ground beef
    • 1 cup chopped onion
    • 1 tablespoon chili powder
    • 1 teaspoon ground cumin
    • 1 teaspoon garlic salt
    • 1 cup raw white rice
    • 1 (15 1/2 ounce) can corn, rinsed
    • 1 (15 ounce) can tomato sauce
    • 2 small zucchini, diced (2 3/4 cups)


    Instructions


    1. Cook beef, onion, chili powder, cumin and garlic salt in a large nonstick skillet 4 to 5 minutes until browned, breaking up clumps of meat with a wooden spoon. Stir in rice and 1 1/2 cups water. Bring to a boil, reduce heat, cover and simmer 10 to 12 minutes until rice is almost tender. Stir in corn, tomato sauce and zucchini. Cover and simmer 8 minutes more or until rice and zucchini are tender.
    2. Serve with oven toasted flour tortillas.
