    POLYNESIAN BROIL

    Source of Recipe

    Frazier Cook Book

    List of Ingredients

    • One 1 1/2 lbs. Flank Steak
    • Combine the following for marinade:
    • 1/3 cup firmly packed brown sugar
    • 1/3 cup soy sauce
    • 1 TBS. cornstarch
    • 3 TBS. cider vinegar
    • 1/4 tsp. ground ginger
    • 1 clove garlic, crushed or 1/4 tsp. garlic powder, if you like garlic, add more

    Instructions

    1. Place all of the marinade ingredients in a ziploc gallon bag and mix all ingredients together. Add meat, close bag up, removing as much air as possible. Marinate for one hour or as long as over night. Broil 15 to 20 minutes, turning once. This is very good grilled, about 6 to 7 minutes per side, depending the heat of the fire!

    2. Cook as desired: Rare : 120 to 123FMedium Rare: 130 to 135FMedium : 140 to 145FMedium Well: 150 to 155FWell Done : 160 and above

    3. Let meat stand for 10 to 15 minutes to redistribute to meat juices. Slice across the grain and as thin as you can carve it so it melts in your mouth!! Enjoy!

    Final Comments

This is perfect for camping! After you have closed up the ziploc, place it in the freezer. When you are packing the cooler for camping, just throw it in the bottom of the cooler and it acts like some of your ice!! By that night or the next day it will be thawed and ready to throw on the grill!! I cook the marinate over the fire and serve with boiled potatoes (cook the potatoes before the meat is put on).

My family likes the meat cooked to 135F so I start temping the meat at about 5 or 6 minutes on the second side.
