    Corn Muffins like Cracker Barrel�s

    Gloria Pitzer discovered after six failed tests
    that filling four of the 12 cupcake wells
    with water and only eight of them with the
    batter, produced the exact texture she
    needed to imitate this restaurant�s
    wonderful corn muffins.

    List of Ingredients




    4 tablespoons sugar

    4 tablespoons butter

    4 tablespoons liquid nondairy creamer

    4 tablespoons yellow cornmeal

    3/4 cup self-rising flour

    Recipe



    Add ingredients to bowl in order listed
    and beat well until it looks like a smooth
    cake batter.

    Divide batter between 8 greased cupcake wells
    and fill the other 4 in a 12-well tin with water.

    Bake at 400 degrees F, 16 to 18 minutes or until
    tester inserted into centers comes out clean.

    Let cool few minutes in pan and remove with two
    forks so not to disturb the water.

    Makes 8 muffins exactly like Cracker Barrel restaurants.

    Per serving:

    132 calories; 6.7 g fat (3.8 g saturated fat;
    46 percent calories from fat);
    16.5 g carbohydrates; 16 mg cholesterol;
    211 mg sodium; 1.3 g protein; 0.4 g fiber.
