    Basic Quesadillas

    List of Ingredients




    4 teaspoons vegetable oil (or slightly more, if using corn tortillas)
    8 flour or corn tortillas (6 to 8 inches each)
    2 cups grated cheese
    1 cup filling, room temperature (optional)
    Sour cream, salsa or guacamole

    Recipe



    Heat skillet over medium heat; add 1/2 teaspoon oil. When hot, place 1
    tortilla in pan; sprinkle with 1/4 cup grated cheese, 1/4 cup filling, if
    using, and another 1/4 cup grated cheese. Top with second tortilla; cook
    until cheese is melting and bottom tortilla is golden brown. Turn; cook
    until golden on both sides, cheese is melted and filling is hot. Cut into
    wedges; garnish with topping. Repeat with remaining ingredients. Serve.
    Makes 4 servings.
