    Dijon Peppercorn New York Steak

    List of Ingredients








    Steak
    1 eight to twelve ounce New York steak
    1 tablespoons cracked black peppercorns
    1 tablespoons olive oil
    1 teaspoon finely chopped shallots
    1 clove finely chopped garlic
    1 ounce whiskey
    3/4 cup Crimini mushroom, thinly sliced
    4 oz. peppercorn sauce (see below)
    1 teaspoon Dijon country mustard
    pinch salt

    Peppercorn Sauce
    1/2 teaspoon green peppercorns
    1/2 teaspoon black peppercorns
    1 1/2 cup light beef stock
    1 cup heavy cream


    Recipe



    Salt New York to taste, then press cracked black peppercorns into
    steak. Over medium heat in a saut� pan heat olive oil, add shallots,
    then garlic. Cook for 30 seconds. add chopped mushrooms saut� until
    tender. Remove mushroom mixture and set aside. Add steak and cook to
    desired doneness. Remove steak and deglaze the pan with whiskey. Add
    peppercorn sauce and Dijon mustard, reduce heat.
    Add mushroom mixture reduce until sauce thickens. Slice and fan steak
    on plate, pour mushroom and sauce mixture over steak. Serve with side
    dish.

    Prepare sauce by adding peppercorns to beef stock in a sauce pan.
    Reduce to one cup. Add heavy cream and again reduce to one cup.
