    Italian Sausage and Pepper Sauce

    List of Ingredients






    1/2 lb. each: hot and sweet Italian sausages, casings removed, or 1 lb. bulk sausage
    1 green bell pepper, cut in strips
    1/4 c. slice red (Bermuda) onion
    1 clove garlic, minced
    1 tsp. dried oregano
    1/2 tsp. each dried basil and thyme
    1/2 tsp. salt
    1/4 tsp. freshly ground pepper
    28 oz. can plum tomatoes
    freshly grated Parmesan, Romano or Asiago

    Recipe



    In large frying pan, saut� sausage until browned. Drain off all but 1 T. fat.

    Add green pepper, onion, garlic, herbs, salt and pepper. Saut� until pepper and onion are tender, about 10 minutes, stirring frequently.

    Stir in tomatoes and their liquid, breaking up tomatoes with a fork. Simmer to reduce liquid; heat until ingredients are thoroughly heated through, about 5 more minutes. Makes about 6 c.
