Steak Fajita Recipe
List of Ingredients
1/3 cup lime juice
1/4 cup red wine vinegar
1 tablespoon soy sauce
1 tablespoon molasses
1 teaspoon minced garlic
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 1/2 pounds stir-fry ready beef strips
1 tablespoon vegetable oil
1 pound frozen pepper stir-fry blend, thawed
8 fajita-sized flour tortillas
2 cups shredded Cheddar cheese
1 large tomato, diced
1 bag shredded iceberg lettuce
8 ounces prepared guacamole or sour cream
8 ounces salsa
Recipe
Prepare the marinade by combining the lime juice, vinegar, soy sauce,
molasses, garlic, cumin, salt and pepper in a bowl. Place beef strips
in gallon-sized zip-top plastic bag. Pour marinade over beef and
refrigerate overnight.
Drain marinade well and pat beef strips dry with paper towels.
Heat a large nonstick skillet over high heat. Add oil and beef
strips. Stir-fry until beef is browned on all sides, but not cooked
through, 2 or 3 minutes. Add pepper blend to beef and cook, stirring
constantly, for about 3 minutes, or until beef is done to your
preference.
Serve the beef and pepper mixture wrapped in flour tortillas. Top
each serving with shredded cheese, diced tomatoes, shredded lettuce,
guacamole, sour cream or salsa as desired.
Makes 6 servings.
