    Pappamia Marinara Sauce

    List of Ingredients





    1 cup olive oil
    3/4 cup each: minced white onion, minced garlic and tomato paste
    1 (No. 10) can (12) cups peeled Italian pear-shaped tomatoes
    5 T sugar
    3-1/2 T salt
    1 cup fresh chopped basil
    1 T black pepper

    Recipe



    This recipe makes 1 gallon. You may want to cut it in half; or make the full recipe and freeze portions in individual containers.

    Heat oil in 8 quart pot over medium heat. Add onion and garlic; cook until light brown. Add tomato paste and cook until dark red. Add tomatoes, sugar and salt; cook 1 hour, stirring frequently. Add basil and pepper. Remove from heat; use immediately or cool and freeze for later use
